Details:
Japanese pickles with a historical and traditional pickling process in Ohara, these are considered to be one of the three major Tsukemono in Kyoto. The shibazuke of Ohara, was originated from the villagers and families having a necessity to preserve their summer vegetables such as eggplants, cucumbers, ginger, myōga (Japanese ginger) and red peppers. The vegetables were then pickled with shiso (Perilla leaves) to create delicious and healthy Japanese pickles, growing more popular every year with foreign travelers. The delicious Tsukemono we carry at Tsuji Shibazuke Honpo currently, are eggplants and shiso leaves pickled with only salt.
